A simple finishing salt from the herb garden

There’s something deeply satisfying about stepping outside with a pair of garden scissors and returning a few moments later with rosemary and thyme still warm from the sun.

Fresh herbs turn an everyday jar of finishing salt into something alive with the season — a little snapshot of the garden at that exact moment in time. The rosemary might be wildly overgrown, the thyme tumbling over the edges of its pot, and waiting on the garden furniture……, there is most certainly a black Finnish Lapphund hoping a piece of bread accidentally falls to the ground, providing the mischief to this blend.

That’s exactly the kind of kitchen magic this salt was made for. The wonderful thing, though, is that this recipe is just as lovely with dried herbs.


DRY HERB SUBSTITUTE Use a 3:1 ratio, substituting 1 tablespoon of dried herbs for 3 tablespoons of fresh

If you have fresh rosemary and thyme growing outside your door, use them. The fragrance while chopping them alone is worth it. But if your herbs come from a pantry jar instead of the garden, your finishing salt will still be delicious, fragrant, and beautifully rustic.

That’s part of the charm. This isn’t a fussy recipe. It’s the kind of thing you toss together while soup simmers on the stove or while waiting for bread to toast. Ihanas Garden Finishing Salt


Ingredients

  • 1/2 cup coarse sea salt—–
  • 1 Tbsp fresh rosemary, finely chopped—–
  • 1 Tbsp fresh thyme leaves—–
  • 1 tsp dried garlic granules—–
  • 1 tsp olive oil or white balsamic vinegar

Optional:

  • 2 Tbsp flaky finishing salt or roasted sesame seeds for extra texture

Directions

Combine the rosemary, thyme, garlic, and olive oil or balsamic in a bowl and let the mixture sit for 15–30 minutes to wake up the flavors.

Stir in the salt until evenly coated.

Spread onto a parchment-lined baking sheet and dry at the oven’s lowest setting (about 170°F) for 30–45 minutes, stirring once or twice, until fully dry.

Cool completely before storing in a tightly sealed jar. Like many good things, the flavor becomes even better after a few days.
