OREGON HARVEST CHARCUTERIE BOWL

Every bite celebrates some of our favorite Pacific Northwest flavors—crisp Hood River pears, toasted Oregon hazelnuts, rich Tillamook® Extra Sharp Cheddar, artisan Olympia Provisions® salami, sweet Oregon blueberries, tart cranberries, and a silky marionberry vinaigrette finished with a pinch of Jacobsen Sea Salt from the Oregon Coast.

Ingredients
  

CUBE OR SLICE THIN THE MEAT AND CHEESE

  • Spring greens & arugula
  • Oregon pear or crisp apple thinly sliced
  • Tillamook® Extra Sharp Cheddar thinly sliced
  • Olympia Provisions® salami or procuitto
  • Oregon blueberries
  • Dried cranberries
  • Toasted Oregon hazelnuts toss in olive oil & seasalt
  • English cucumber thinly sliced
  • Radishes thinly sliced
  • Red onion slivers or pickled onion

MARIONBERRY DRESSING

  • 1/4 cup virgin olive oil
  • 3 Tbsp balsamic vinegar
  • Tbsp marionberry or seedless blackberry preserves
  • 2 tsp honey
  • tsp Dijon mustard
  • 1 tsp finely minced shallot
  • 1 tsp fresh lemon juice
  • Pinch of Jacobsen Sea Salt
  • Fresh cracked black pepper

Instructions
 

  • Mix the dressing ingredients well and let sit while preparing the other ingredients
  • Slice meats and cheese to desired size for a salad
  • Place greens on a large plate or in a big bowl. Toss a little of the dressing on the greens. Now add the rest of your charcuterie goodies and either drizzile dressing on the top to serve or toss everything gently together then serve in indivulad bowls

SOOT's Purrrrfect Suggestions

As with all my recipes, there's always room to wander off the beaten path and make it your own! Here are a few of my favorite twists:
  •  Swap the salami for smoked chicken for a lighter but equally delicious picnic bowl.
  •  Add a handful of chopped dates or dried figs for a touch of natural sweetness.
  •  Try candied pecans or toasted walnuts in place of the hazelnuts for a whole new flavor adventure.
  •  Don't be afraid to experiment with the cheese! Any favorite aged cheddar, Gouda, Gruyère, or even a firm crumbled blue cheese is wonderful.
  •  Adjust the ingredients to suit your own taste. A little more pear? Extra cheese? More berries?  Thats the beauty of the harvest bowl!
Serve with a warm, crusty baguette and your favorite Oregon Pinot Noir.
And most importantly...find a beautiful view, gather good company, and savor every bite.
